  • 1 teaspoon vanilla extract
  • 1/2 cup (60g) all-purpose flour
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon instant coffee powder or espresso powder (optional)
  • 1/2 cup (113g) unsalted butter, softened (for frosting)
  • 1 1/2 cups (180g) powdered sugar
  • 1/4 cup (20g) unsweetened cocoa powder (for frosting)
  • 2 tablespoons heavy cream or whole milk
  • 1/2 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • White icing or melted white chocolate (for decoration)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a mini muffin tin generously with butter or non-stick spray.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
  3. In a separate medium bowl, sift together flour, cocoa powder, salt, baking powder, and instant coffee powder. Gradually add dry ingredients to wet ingredients, folding gently with a spatula until just combined. Do not overmix.
  4. Scoop batter into prepared mini muffin cups, filling each about 3/4 full. Bake for 10-12 minutes until edges are set and centers are slightly soft. Cool in pan for 5 minutes, then transfer to a cooling rack to cool completely.
  5. While brownie bites cool, make frosting: In a medium bowl, beat softened butter until creamy. Add powdered sugar and cocoa powder, mix on low until combined. Add heavy cream, vanilla extract, and salt. Beat on medium-high for 2-3 minutes until light and fluffy.
  6. Once brownie bites are completely cool, gently roll each between your palms to form an oval football shape. Place on a parchment-lined baking sheet.
  7. Transfer chocolate frosting to a piping bag with a small round tip (or a zip-top bag with a tiny corner snipped). Pipe a thin layer of frosting over each football-shaped brownie, smoothing with a small offset spatula.
  8. Using white icing or melted white chocolate in another small piping bag, pipe two thin parallel lines down the center of each football, then add small crosswise lines to resemble laces.
  9. Let frosted brownie bites sit at room temperature for about 15 minutes to set the frosting. Serve at room temperature.

Notes

Don’t overbake; brownies continue to cook from residual heat. Cool completely before shaping to prevent crumbling. Use a light touch when shaping to maintain fudgy texture. Keep frosting at room temperature for easy piping. Practice laces on parchment first.
