A quick, no-bake snack made with simple pantry staples like oats, honey, and nut butter. These protein balls are chewy, energy-boosting, and perfect for on-the-go snacking without any cooking required.

Ingredients

  • 1.5 cups Rolled Oats (Old-Fashioned)
  • 1/2 cup Sticky Honey
  • 1/2 cup Natural Peanut Butter or Almond Butter
  • 2 tablespoons Ground Flaxseed
  • 1 scoop Protein Powder (Vanilla or Unflavored, Optional)
  • 1/4 cup Mini Chocolate Chips
  • 1 teaspoon Vanilla Extract
  • A pinch Salt

Instructions

  1. In a medium bowl, combine the honey, nut butter, and vanilla extract. If the nut butter is stiff, microwave it for 15 seconds to soften. Whisk until smooth and creamy.
  2. Add the rolled oats, ground flaxseed, protein powder (if using), and salt to the wet mixture. Stir vigorously until all oats are coated and the mixture begins to clump together.
  3. Check the consistency: the dough should hold together when squeezed. If too crumbly, add more honey or nut butter; if too sticky, add more oats.
  4. Fold in chocolate chips, dried fruit, or nuts gently until evenly distributed.
  5. Place the bowl in the refrigerator and chill for 20 minutes to firm up the mixture.
  6. Remove from the fridge and wet your hands slightly with water or oil. Scoop about a tablespoon of mixture and roll between palms to form smooth balls. Place on a parchment-lined baking sheet.
  7. Refrigerate the baking sheet for at least 30 minutes to set the balls before serving.

Notes

For best results, ensure ingredients are at room temperature or slightly softened for easier mixing. If the mixture is too sticky, chill longer or add more oats. Store in an airtight container in the fridge for up to two weeks or freeze for up to three months. Do not bake as it alters the texture.
