  • 1 pound smoked sausage or kielbasa, sliced into half-moons
  • 1 medium yellow onion, diced (about 1.5 cups)
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch cubes (about 6 medium potatoes)
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup heavy cream
  • 1 tablespoon all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Brown the sausage: Heat olive oil in a Dutch oven over medium-high heat. Add sliced sausage in a single layer and cook for 3-4 minutes per side until browned and crispy. Transfer to a plate with a slotted spoon.
  2. Sauté the aromatics: Reduce heat to medium. Add diced onion to the pot with rendered sausage fat. Cook for 4-5 minutes until soft and translucent, scraping up browned bits. Add minced garlic and cook for 30 seconds until fragrant.
  3. Bloom the spices: Add dried thyme, smoked paprika, and black pepper. Stir constantly for about 30 seconds until fragrant.
  4. Add broth and potatoes: Pour in chicken broth and scrape up any remaining browned bits. Add cubed potatoes and salt. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 15-20 minutes until potatoes are fork-tender.
  5. Thicken the soup (optional): If desired, whisk 1 tablespoon flour into 1/4 cup cold water until smooth. Stir into simmering soup and cook for 2-3 minutes until slightly thickened.
  6. Add cream and sausage: Reduce heat to low. Stir in heavy cream and browned sausage. Heat through for 3-5 minutes without boiling.
  7. Taste and adjust: Adjust seasoning with more salt, pepper, or smoked paprika as needed.
  8. Serve and garnish: Ladle into bowls and top with fresh parsley. Serve immediately with crusty bread or a side salad.

Notes

For best flavor, brown the sausage properly to develop fond. Cut potatoes evenly for uniform cooking. Let soup rest 5-10 minutes before serving. Soup tastes even better the next day. To prevent cream from curdling, add over low heat and do not boil. For a thicker soup, mash some potatoes against the pot or use a flour slurry. For a dairy-free version, use full-fat coconut milk instead of heavy cream.
