A forgiving and delicious breakfast casserole where raw sausage and bread soak in an egg mixture overnight, resulting in a tender, custard-like texture with minimal morning prep time.

  • 8 cups cubed day-old bread (stale white or sourdough)
  • 1 pound raw breakfast sausage (mild or spicy)
  • 12 large eggs
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried mustard powder

Instructions

  1. Prep the bread: Cut bread into one-inch cubes and spread on a baking sheet to dry out for an hour, or use day-old bread.
  2. Cook the sausage: Heat a skillet over medium heat, add raw sausage, and break into small pieces. Cook until browned and cooked through, then drain excess grease and let cool slightly.
  3. Combine dry ingredients: Grease a 9×13 inch baking dish. Spread bread cubes evenly in the dish and sprinkle the cooked sausage over the bread.
  4. Whisk the wet mixture: In a large bowl, whisk eggs, milk, salt, pepper, and mustard powder until fully combined.
  5. Pour and soak: Pour the egg mixture evenly over the bread and sausage. Press down gently with a spatula to ensure all bread is submerged.
  6. Refrigerate: Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  7. Bake: Preheat oven to 350°F (175°C). Remove plastic wrap, sprinkle cheese on top, and bake for 30-35 minutes until the top is golden brown and the center is set.
  8. Rest and serve: Let the casserole rest for 10 minutes before cutting to allow it to set.

Notes

Use stale bread to prevent sogginess. If the top browns too quickly, cover with foil for the last 10 minutes. Do not stir while baking. Let rest before serving to ensure it holds together.
