This Easy Pumpkin Dump Cake with Pecan Streusel is the fall dessert you didn’t know you needed. It’s simple enough for a Tuesday night, impressive enough for Thanksgiving, and forgiving enough for beginner bakers, with a silky spiced pumpkin layer and a buttery, crunchy pecan topping.

Ingredients

Scale
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 can (12 oz) evaporated milk
  • 3 large eggs, room temperature
  • 1 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 box (15.25 oz) yellow cake mix (dry, not prepared)
  • 1 cup chopped pecans
  • 1/2 cup packed light brown sugar
  • 1 teaspoon cinnamon
  • 3/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the pumpkin puree, evaporated milk, eggs, granulated sugar, pumpkin pie spice, and vanilla extract. Whisk until smooth and well combined (about 2 minutes with a whisk or 1 minute with a hand mixer on low).
  3. Pour the pumpkin mixture into the prepared baking dish. Use a spatula to spread it evenly to the edges. Give the pan a gentle shake to level it out.
  4. In a separate small bowl, combine the dry yellow cake mix, chopped pecans, brown sugar, and cinnamon. Stir with a fork to distribute evenly. Pour the melted butter over the dry mixture and stir until it forms a crumbly, clumpy texture.
  5. Sprinkle the pecan streusel evenly over the pumpkin layer. Do not press it down; let it sit loosely on top.
  6. Bake for 45 to 50 minutes, until the top is golden brown and the edges are bubbling. The center should be set but still slightly jiggly.
  7. Remove from the oven and place on a wire rack. Let the cake cool for at least 20 minutes before serving. Serve warm, at room temperature, or chilled.

Notes

Don’t overmix the pumpkin layer to avoid too much air. Use cold butter for chunkier streusel if desired. Watch the edges and tent with foil if browning too fast. Let the cake rest for 20 minutes before serving for cleaner slices. Always use pure pumpkin, not pumpkin pie filling.
