These incredibly easy slow cooker Buffalo chicken sliders are the ultimate game day food. Tender, shredded chicken in a tangy, buttery, spicy sauce is piled onto soft buns with melted cheese for a crowd-pleasing meal that’s always a hit.

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup Buffalo wing sauce (such as Frank’s RedHot)
  • 1 packet ranch dressing mix
  • 1/4 cup unsalted butter, melted
  • 1216 slider buns (brioche recommended)
  • 8 slices provolone or mozzarella cheese
  • 1/2 cup blue cheese crumbles (optional)
  • Butter lettuce leaves (for serving)

Instructions

  1. In a small mixing bowl, whisk together the Buffalo wing sauce, ranch dressing mix, and melted unsalted butter until combined.
  2. Place the chicken breasts in the bottom of a 5-6 quart slow cooker. Pour the sauce mixture over the top, ensuring all pieces are coated.
  3. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is tender and shreds easily.
  4. Carefully remove the chicken from the slow cooker and place on a cutting board. Use two forks to shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir into the sauce. Let sit on warm for about 10 minutes.
  5. Preheat the oven’s broiler. Split the slider buns in half and place the bottom halves on a parchment-lined baking sheet. Spoon a generous amount of Buffalo chicken onto each bun bottom. Top with a slice of cheese and a sprinkle of blue cheese crumbles (if using). Place the top buns on.
  6. Broil for 1-2 minutes, until the cheese is melted and the buns are lightly toasted. Watch closely to avoid burning.
  7. Remove from the oven, tuck a butter lettuce leaf into each slider if desired, and serve immediately.

Notes

For a milder version, use 1/2 cup Buffalo sauce and 1/2 cup chicken broth. For extra heat, add 1 teaspoon cayenne pepper. The chicken can be made in an Instant Pot on high pressure for 12 minutes. Leftover chicken can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
