A nostalgic and comforting slow cooker recipe that combines tender chicken breasts with a glossy, sweet and savory honey garlic glaze. Simple to prepare and perfect for weeknight dinners or meal prep.

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 1/2 cup pure honey
  • 1/4 cup low-sodium soy sauce (or Tamari for gluten-free)
  • 45 cloves fresh garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 1 tablespoon cold water (slurry)
  • Green onions, chopped (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. Rinse chicken breasts and pat dry with paper towels. Place them in the bottom of a 6-quart slow cooker in a single layer.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil until combined.
  3. Pour the sauce evenly over the chicken breasts, using a spoon to baste the tops to ensure they are fully coated.
  4. Cover and cook on LOW for 4 to 6 hours, until the chicken reaches an internal temperature of 165°F (74°C).
  5. Remove chicken from the slow cooker and set aside on a plate.
  6. Whisk the cornstarch slurry (cornstarch and cold water) and pour it into the hot sauce in the slow cooker. Stir well.
  7. Cover and cook on HIGH for 15-20 minutes until the sauce thickens and coats the back of a spoon.
  8. Return the chicken to the pot and toss to coat in the thickened sauce.
  9. Garnish with chopped green onions and sesame seeds before serving.

Notes

For best results, use fresh garlic and ginger rather than jarred versions. If the sauce is too thin after cooking, the cornstarch slurry will fix it; if too thick, add a splash of water or broth. Do not cook on HIGH as it may dry out the chicken breasts. This recipe is naturally dairy-free.
