  • 1 cup fresh strawberries, hulled and sliced (about 150g)
  • 1 large ripe banana, mashed (about 120g)
  • 1 cup plain Greek yogurt (245g), preferably full-fat
  • 1 to 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon fresh lemon juice

Instructions

  1. Prepare your fruit: wash and hull the strawberries, then slice into halves or quarters depending on size. Peel and mash the ripe banana in a bowl until smooth but still slightly chunky.
  2. Mix the base: In a blender, combine the sliced strawberries, mashed banana, plain Greek yogurt, honey or maple syrup, vanilla extract, and lemon juice. Blend until smooth but with some small fruit pieces remaining, about 1-2 minutes.
  3. Taste and adjust: Taste the mixture and add more honey or syrup if you want it sweeter. Blend briefly again if needed.
  4. Fill the molds: Pour the mixture evenly into popsicle molds, leaving a small gap at the top for expansion. Insert sticks and cover with lids or foil if molds don’t have lids.
  5. Freeze: Place molds in the freezer for at least 4-6 hours or overnight. Avoid opening the freezer frequently.
  6. Serve: Run molds under warm water for a few seconds to loosen popsicles, then gently pull them out and serve immediately.

Notes

If popsicles are too icy or hard, try blending in a tablespoon of milk or juice next time. Use thick Greek yogurt to avoid icy texture. Frozen strawberries can be used if thawed and drained well. For dairy-free, substitute Greek yogurt with coconut or almond milk yogurt. Adding chia seeds is optional but may affect texture.
