  • 4 slices provolone cheese (or Swiss)
  • 2 tablespoons Dijon mustard
  • 1 cup fresh spinach leaves (optional)

Instructions

  1. Prepare the avocado spread: Cut avocados in half, remove pits, scoop flesh into a small bowl. Add lemon juice, salt, and pepper. Mash with a fork until smooth but slightly chunky. Taste and adjust seasoning. Set aside.
  2. Slice the croissants: Using a serrated knife, slice each croissant horizontally through the middle, leaving one side attached if possible.
  3. Spread the base: On the bottom half of each croissant, spread about 1 tablespoon of mayonnaise. On the top half, spread about 1/2 tablespoon of Dijon mustard.
  4. Layer the turkey: Fold turkey slices and layer evenly on the bottom half of each croissant (about 4 ounces per sandwich).
