These easy-to-make ice cream sandwiches combine crunchy cookies, creamy ice cream, and fresh berries for a festive and crowd-pleasing summer dessert perfect for celebrations like the Fourth of July.

  • 24 chocolate or sugar cookies (Archway recommended)
  • Optional: red velvet cookies for extra color
  • 1 quart (950 ml) vanilla ice cream, softened
  • Optional: blueberry or strawberry flavored ice cream
  • 1 cup (150 g) fresh strawberries, sliced
  • 1 cup (150 g) fresh blueberries
  • 1 cup (240 ml) whipped cream (optional)
  • Optional: red and blue sprinkles or edible glitter
  • Wax paper or parchment for wrapping sandwiches

Instructions

  1. Line a baking sheet with parchment or wax paper. Let ice cream soften at room temperature for 5-10 minutes.
  2. Wash and dry strawberries and blueberries. Slice strawberries thinly. Optionally toss berries with 1 teaspoon sugar and let sit briefly.
  3. Lay out half of the cookies on the baking sheet, flat side up. Spread 2 tablespoons (30 g) of softened vanilla ice cream evenly on each cookie, leaving a small edge.
  4. Place sliced strawberries over half the ice cream surface, then add blueberries on the remaining half or scatter evenly. Optionally add a dollop of whipped cream on top.
  5. Top each with a remaining cookie, pressing gently to form a sandwich without squeezing too hard.
  6. Wrap each sandwich individually in wax paper and freeze for at least 2 hours until firm.
  7. Remove from freezer about 5 minutes before serving to soften slightly. Arrange on a platter and enjoy.

Notes

Let ice cream soften just enough to spread easily but not melt to avoid soggy cookies. Dry berries thoroughly before assembling. Wrap sandwiches individually to prevent freezer burn and sticking. If ice cream becomes too soft during assembly, chill briefly before continuing.
