Ingredients

Scale
  • 4 cups shredded green cabbage (about half a medium head)
  • 2 cups shredded red cabbage
  • 1 large carrot, peeled and julienned or shredded
  • 1/2 small red onion, thinly sliced
  • 1 jalapeño, seeded and finely chopped (adjust for heat preference)
  • 1/3 cup apple cider vinegar
  • 3 tablespoons olive oil or neutral oil like grapeseed
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/4 to 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt (preferably kosher or sea salt)
  • Freshly ground black pepper, to taste
  • Optional garnish: chopped fresh cilantro or parsley
  • Optional garnish: toasted sesame seeds

Instructions

  1. Prepare the Vegetables (10–15 minutes): Wash cabbage heads thoroughly. Remove cores and shred green and red cabbage finely using a box grater, mandoline, or sharp knife. Peel and shred the carrot, thinly slice the red onion, and finely chop the jalapeño (remove seeds for less heat). Place all vegetables in a large mixing bowl.
  2. Make the Firecracker Dressing (5 minutes): In a small bowl, whisk together apple cider vinegar, olive oil, honey, Dijon mustard, smoked paprika, cayenne pepper, salt, and freshly ground black pepper until fully combined and slightly emulsified. Taste and adjust seasoning as needed.
  3. Toss the Slaw (3 minutes): Pour the dressing over the shredded vegetables and toss thoroughly to coat evenly.
  4. Marinate for Maximum Flavor (at least 15 minutes, up to 2 hours): Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate to let flavors meld and cabbage soften slightly while retaining crunch.
  5. Final Touches and Serving: Before serving, toss the coleslaw again and adjust salt or spice if needed. Sprinkle chopped cilantro or toasted sesame seeds on top for garnish.

Notes

Do not overdress the slaw to avoid sogginess. Finely shred cabbage for best texture. Adjust heat by removing jalapeño seeds or reducing cayenne pepper. Marinate at least 15 minutes for best flavor, but no longer than 2 hours to maintain crunch. Drain excess liquid if needed before serving.
