Flavorful Grilled Corn on the Cob with Chipotle Lime Butter

An easy and bold grilled corn on the cob recipe featuring smoky chipotle lime butter, perfect for summer BBQs and gatherings.

  • 4 ears fresh corn on the cob, husked
  • 4 tablespoons unsalted butter, softened
  • 12 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon fresh lime juice (about half a lime)
  • 1 clove garlic, minced
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon fresh cilantro, chopped (optional)

Instructions

  1. Preheat your grill to medium-high heat, about 400°F (200°C).
  2. In a mixing bowl, combine softened butter, chopped chipotle peppers, fresh lime juice, minced garlic, smoked paprika, salt, and black pepper. Mix thoroughly until smooth.
  3. Husk the corn by removing husks and silk. Rinse under cold water and pat dry. Optionally, soak husks in water for 10 minutes if you prefer juicier corn.
  4. Place the corn directly on the grill grates. Turn every 2-3 minutes to get an even char all around. Grill for about 12-15 minutes until kernels have blackened spots but are not burnt.
  5. Remove corn from grill and immediately brush generously with the chipotle lime butter.
  6. Sprinkle chopped fresh cilantro over the buttered corn for garnish and serve hot.

Notes

If butter thickens while grilling, mash it with a spoon to keep spreadable. For juicier corn, soak husks in water before grilling. Butter can be made ahead and stored in fridge. For dairy-free, substitute butter with coconut oil or plant-based spread. Oven roasting at 425°F for 20 minutes is a good alternative if no grill is available.
