A quick and easy homemade peach jam infused with fresh ginger and cardamom, delivering a warm, sweet, and slightly spicy flavor perfect for toast, yogurt, or gifting.

Ingredients

Scale
  • 4 cups fresh peaches, peeled and chopped (about 45 medium peaches)
  • 1 ¾ cups granulated sugar (adjust to taste)
  • 1 tablespoon fresh ginger, finely grated
  • 68 green cardamom pods, seeds crushed
  • 2 tablespoons freshly squeezed lemon juice
  • ½ cup water
  • Optional: pinch of ground cinnamon or vanilla extract

Instructions

  1. Prepare the peaches by washing and peeling them. Score a small ‘X’ at the bottom of each peach and blanch in boiling water for 30 seconds, then transfer to ice water to loosen skins. Chop into ½-inch pieces (about 4 cups).
  2. Crush the cardamom seeds by splitting the pods and gently crushing the seeds using a mortar and pestle or the back of a spoon. Set aside.
  3. In a large heavy-bottomed pot, combine chopped peaches, sugar, grated ginger, crushed cardamom seeds, lemon juice, and water. Stir gently and let sit for 10 minutes to dissolve sugar and mingle flavors.
  4. Place the pot over medium heat and bring to a gentle boil, stirring occasionally. Reduce heat to medium-low and simmer uncovered for 30-40 minutes, stirring every 5 minutes to prevent sticking, until jam thickens and coats the back of a spoon.
  5. Test the jam set by placing a spoonful on a chilled plate; after cooling for a minute, push with your finger. If it wrinkles and holds shape, it is ready. If not, cook longer, checking every 5 minutes.
  6. Optional: For a smoother texture, push the jam through a fine mesh sieve or briefly blend with an immersion blender, leaving some peach chunks if desired.
  7. Pour hot jam into sterilized glass jars, leaving ¼-inch headspace. Wipe rims clean, seal tightly, and let cool to room temperature before refrigerating.

Notes

Skim off foam during cooking for clearer jam. Avoid high heat to prevent burning or bitterness. Use fresh green cardamom pods for best aroma. Peeling peaches improves texture but can be skipped for rustic style. Jam thickens further as it cools. Store refrigerated up to 3 weeks or freeze for longer storage.
