  • 2 medium navel oranges (for juice and zest)
  • 2 tablespoons fresh ginger root, finely grated
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (optional, for floral sweetness)

Instructions

  1. Wash oranges thoroughly. Cut one orange in half and juice it, reserving about 1/3 to 1/2 cup of juice.
  2. Zest both oranges using a microplane, ensuring only the colored part is removed to avoid bitter pith.
  3. Add fresh cranberries to a food processor and pulse 10-15 times until finely chopped but not pureed.
  4. Peel and finely grate the ginger root using a microplane.
  5. Transfer chopped cranberries to a large mixing bowl. Add orange zest, orange juice, sugar, lemon juice, and grated ginger. Stir until sugar is mostly dissolved.
  6. Cover and refrigerate for at least 2 hours to allow flavors to meld and cranberries to soften.

Notes

Do not over-process the cranberries; they should remain crunchy. Taste before chilling and adjust sweetness with more sugar or tartness with lemon juice. Flavors improve after 24 hours. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
