  • Fresh basil leaves, torn (about 6 leaves)
  • 4 large eggs
  • Pinch of salt
  • 4 slices rustic bread (sourdough or whole grain)
  • Butter or olive oil, for toasting
  • Optional: smoked salmon slices
  • Optional: fresh fruit like berries or orange segments

Instructions

  1. Bring a medium saucepan of water to a gentle boil. Carefully add 4 large eggs using a slotted spoon. Boil for exactly 6 minutes for creamy yolks.
  2. Immediately transfer eggs to a bowl of ice water to stop cooking. Let cool for 2 minutes, then gently peel.
  3. In a small bowl, mash the ripe avocado with a fork until smooth but still slightly chunky.
  4. Stir in 2 tablespoons Greek yogurt, 1 tablespoon lemon juice, and 1 tablespoon chopped fresh dill. Season with salt and pepper to taste.
  5. In a medium bowl, combine halved cherry tomatoes, diced cucumber, and finely chopped red onion if using.
  6. Drizzle with 1 tablespoon olive oil and 1 teaspoon vinegar. Toss gently, then add torn basil leaves. Season with salt and pepper.
  7. Toast 4 slices of rustic bread until golden and crisp. Spread a thin layer of butter or lightly brush with olive oil before toasting if desired.
  8. Spread the avocado herb mixture generously over warm toast.
  9. Halve or quarter the peeled soft boiled eggs and arrange on the side or atop the toast.
  10. Serve the fresh tomato and cucumber salad alongside. Add smoked salmon or fresh fruit if desired.
  11. Sprinkle a little flaky sea salt over the eggs and avocado spread for a touch of crunch.
  12. Pour your favorite morning beverage and enjoy.
