Fresh Mediterranean Cucumber Tomato Salad with Feta

A refreshing and tangy cucumber tomato salad with kalamata olives and feta cheese, perfect for summer. Quick to make and bursting with Mediterranean flavors.

  • 2 large English cucumbers (or 3 medium Persian cucumbers), unpeeled and diced into half-inch pieces
  • 1 pint cherry tomatoes (about 2 cups), halved or quartered
  • 1/2 cup kalamata olives, pitted and roughly chopped
  • 1/2 cup red onion, thinly sliced into half-moons
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, finely chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 clove garlic, minced or grated
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, freshly cracked

Instructions

  1. Prep the vegetables (5 minutes): Wash and dry cucumbers, tomatoes, and parsley. Dice cucumbers into half-inch cubes. Halve or quarter cherry tomatoes. Thinly slice red onion into half-moons. If sensitive to raw onion, soak slices in ice water for 5 minutes.
  2. Make the dressing (2 minutes): In a small bowl or mason jar, combine olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and pepper. Whisk or shake until emulsified. Taste and adjust seasoning if needed.
  3. Combine and marinate (2 minutes + 10 minutes resting): In a large mixing bowl, add cucumbers, tomatoes, olives, red onion, and parsley. Pour dressing over top and toss gently. Let sit at room temperature for at least 10 minutes.
  4. Add the feta and finish (1 minute): Just before serving, crumble or cube feta cheese and scatter over the top. Gently fold in. Taste and adjust seasoning. Transfer to serving bowl and garnish with extra parsley or olive oil if desired.
  5. Serve immediately or refrigerate: Best within an hour of making. Holds up in fridge for up to 24 hours. If making ahead, keep dressing separate and toss just before serving.

Notes

For best results, use English or Persian cucumbers to avoid excess water. Let the salad rest for 10 minutes after dressing to allow flavors to meld. Use block feta instead of pre-crumbled for better texture. If using garden cucumbers, peel and seed them first. The salad can be made ahead but is best within an hour of assembly.
