A simple and refreshing summer appetizer combining juicy nectarines, creamy mozzarella, and fragrant basil on skewers, perfect for light and flavorful entertaining.

Ingredients

  • Fresh nectarines, ripe but firm, sliced into bite-sized wedges
  • Fresh mozzarella balls (bocconcini size)
  • Fresh basil leaves, whole
  • Extra virgin olive oil, for drizzling
  • Balsamic glaze or reduction, optional
  • Sea salt
  • Freshly cracked black pepper
  • Wooden skewers or toothpicks

Instructions

  1. Rinse nectarines under cold water and pat dry. Slice each nectarine into 8 wedges about 1/4-inch thick.
  2. Drain the mozzarella balls in a colander for a few minutes. Cut large balls in half to match nectarine wedge size.
  3. Gently rinse basil leaves and pat dry with a kitchen or paper towel, avoiding bruising.
  4. Using wooden skewers or toothpicks, thread one nectarine wedge, a basil leaf folded in half, then one mozzarella ball or half. Repeat if skewer length allows.
  5. Arrange skewers neatly on a serving platter, spacing evenly.
  6. Lightly sprinkle sea salt and freshly cracked black pepper over the skewers.
  7. Drizzle extra virgin olive oil and balsamic glaze (if using) over the skewers.
  8. Serve immediately for best freshness. If preparing ahead, cover and refrigerate up to 1 hour, adding olive oil and balsamic glaze just before serving.

Notes

Use ripe but firm nectarines to avoid mushy skewers. Fold basil leaves instead of piercing flat to preserve flavor. Drizzle olive oil last to help balsamic glaze stick. For a smoky flavor, grill skewers 2 minutes per side carefully to avoid burning basil. Prepare ahead but add oil and glaze just before serving.
