A quick and easy refreshing summer drink combining ripe peaches, fresh mint, and black tea for a sweet and herbal iced tea perfect for outdoor gatherings.

Ingredients

Scale
  • 4 regular-sized black tea bags
  • 2 medium fresh ripe peaches, sliced thin
  • About 12 fresh mint leaves, washed and gently bruised
  • 1/4 cup (50 g) granulated sugar or honey, adjust to taste
  • 6 cups (1.4 liters) filtered water
  • 1 tablespoon fresh lemon juice

Instructions

  1. Bring 6 cups (1.4 liters) of filtered water to a rolling boil using a kettle or pot (about 5-7 minutes).
  2. Place 4 black tea bags into a large heatproof pitcher. Pour boiling water over the tea bags and steep for 5-7 minutes without oversteeping.
  3. Remove tea bags, squeezing out a little liquid. While tea is still warm, stir in 1/4 cup granulated sugar or honey until fully dissolved (about 1-2 minutes).
  4. Let the sweetened tea cool at room temperature for about 20 minutes.
  5. Add sliced peaches and bruised mint leaves to the pitcher and stir gently to distribute flavors.
  6. Cover and refrigerate for at least 2 hours or overnight for full infusion.
  7. Just before serving, stir in 1 tablespoon fresh lemon juice. Serve over ice cubes in glasses.

Notes

Do not oversteep tea bags to avoid bitterness. Bruise mint leaves gently to release flavor without bitterness. Use ripe peaches for best flavor. Dissolve sugar in hot tea before adding fruit. Chill tea with fruit for at least 2 hours for full infusion. For quicker chilling, add ice cubes but expect slight dilution. Frozen peaches can be used if fresh are unavailable.
