  • 2 tablespoons unsalted butter
  • 2 large yellow onions, thinly sliced into half-moons
  • 2 bell peppers (mix of colors), sliced into thin strips
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 46 hoagie or brat buns
  • Mustard (yellow, spicy brown, or stone-ground)
  • Optional toppings: sauerkraut, pickled jalapeños, shredded cheese, hot sauce

Instructions

  1. Prep your veggies: Slice the onions into thin half-moons (about 1/4-inch thick). Slice the bell peppers into thin strips, discarding seeds and membranes. Set aside. Open your beer and let it sit at room temperature.
  2. Start the onions and peppers: Heat a large skillet over medium heat and add olive oil and 1 tablespoon butter. Once melted, add sliced onions. Cook for about 5 minutes, stirring occasionally, until softened and translucent. Add bell peppers, salt, pepper, and garlic powder (if using). Continue cooking for another 5-7 minutes, stirring every minute, until onions are light golden brown and peppers are softened.
  3. Simmer the brats: Push onions and peppers to one side of the skillet or transfer to a plate. Add remaining 1 tablespoon butter to the empty side. Once melted, add bratwurst links in a single layer. Brown for about 2 minutes per side. Pour in the entire bottle of beer (it should come about halfway up the sides of the brats).   5. Finish the veggies: While brats are grilling, turn heat under the skillet to medium-high. Cook onions and peppers in remaining beer mixture for 1-2 minutes, stirring constantly, until liquid mostly evaporates and veggies are glossy. Taste and adjust seasoning.
  6. Toast the buns: Split buns and place cut-side down on the grill for the last minute of cooking, until lightly golden.
  7. Assemble and serve: Place each grilled brat in a toasted bun. Top generously with caramelized onions and peppers. Add mustard or preferred condiment. Serve immediately.

Don’t skip browning the brats before simmering—it adds deep flavor. Caramelize onions low and slow for best results. Use a meat thermometer to ensure brats reach 160°F internally.
