  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt (kosher salt recommended)
  • 1/4 teaspoon black pepper, freshly ground
  • 1 (2-3 pound) bone-in, skin-on turkey breast
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, for seasoning the outside
  • 1/4 teaspoon black pepper, for seasoning the outside
  • 1/2 cup low-sodium chicken broth or turkey broth

Instructions

  1. Preheat your oven to 400°F (200°C). Remove the turkey breast from the refrigerator and let it sit at room temperature for about 20 minutes. Pat the turkey breast completely dry with paper towels.
  2. In a small bowl, combine the softened butter, chopped parsley, thyme, rosemary, minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper. Mix with a fork until everything is well combined.
  3. Gently slide your fingers under the skin of the turkey breast, being careful not to tear it. Work your fingers between the skin and the meat, creating a pocket.
  4. Take about two-thirds of the herb butter and push it under the loosened skin. Use your fingers to spread it evenly over the breast meat. Rub the remaining butter all over the outside of the skin.
  5. Drizzle the olive oil over the turkey breast and rub it in. Sprinkle the remaining 1/2 teaspoon of salt and 1/4 teaspoon of pepper evenly over the entire breast. Place the turkey breast, skin-side up, in your roasting pan or baking dish.
  6. Pour the chicken broth into the bottom of the pan, being careful not to pour it over the turkey skin.
  7. Place the pan in the preheated oven. Roast for 50-65 minutes, or until the internal temperature of the thickest part of the breast reaches 155°F (68°C). Start checking the temperature at the 45-minute mark.
  8. Once the turkey reaches 155°F, remove it from the oven. Transfer the turkey breast to a cutting board and tent it loosely with aluminum foil. Let it rest for 15-20 minutes. The internal temperature will continue to rise to a safe 165°F (74°C) during this time. Slice and serve with the pan juices spooned over the top.

Don’t skip the resting period—it allows the juices to redistribute, ensuring every slice is juicy. Use an instant-read thermometer for perfect results. If the skin browns too quickly, tent with foil. The butter under the skin is key for moisture and flavor.
