  • 3 cups mixed fresh berries (strawberries hulled and sliced, blueberries, raspberries, blackberries)
  • 1 ½ cups heavy cream, cold
  • ¼ cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Zest of one lemon
  • ½ cup berry sauce (optional, pureed berries lightly sweetened)

Instructions

  1. Rinse and gently pat dry 3 cups of mixed berries. Slice strawberries thinly and set aside ½ cup for garnish.
  2. Chill mixing bowl and beaters for 10 minutes. Pour cold heavy cream into bowl, add powdered sugar and vanilla extract. Whip on medium-high until soft peaks form, about 3-5 minutes.
  3. Cut angel food cake into roughly 1-inch cubes. Trim edges if too dry.
  4. In a trifle bowl, layer angel food cake cubes evenly on the bottom. Drizzle 2 tablespoons of optional berry sauce if using.
  5. Add a generous layer of mixed berries, then spoon on one-third of the whipped cream, spreading gently.
  6. Repeat layering two more times: cake, sauce, berries, cream, ending with a final layer of whipped cream on top.
  7. Garnish with reserved whole berries and sprinkle lemon zest on top.
  8. Chill the trifle for at least 2 hours before serving to let flavors meld and cake soak up berry juices.
  9. Serve chilled, scooping to get a bit of each layer in every spoonful.

Notes

Chill mixing bowl and beaters before whipping cream for best results. Use fresh, dry berries to avoid soggy cake. If cream is too soft, chill in freezer for 10 minutes before assembling. Drain excess liquid from berries if very juicy. Assemble trifle gently to keep airy texture. Store leftovers covered in refrigerator up to 2 days.
