  • ½ cup raw walnuts
  • 2 tablespoons raw honey
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground cinnamon (optional)
  • 1 teaspoon coconut oil (optional)
  • 4 ounces brie cheese
  • 2 ounces goat cheese
  • 1 tablespoon honey (for drizzling)
  • 1 medium green apple, sliced
  • ½ cup red grapes
  • 45 dried figs, halved
  • Fresh rosemary sprigs (for garnish)
  • 68 whole grain crackers
  • 1 ounce dark chocolate, shaved or in small pieces
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Toast the nuts: Heat a small skillet over medium heat. Add the raw almonds and walnuts. Toast for 3-4 minutes, stirring frequently, until fragrant and lightly golden. Transfer to a small bowl.
  2. Make the honey nut coating: In the same skillet (off heat), add 2 tablespoons honey, sea salt, and cinnamon. Stir to combine. Add the toasted nuts back in and toss until coated. Spread nuts on parchment paper to cool slightly. Tip: If the honey seems too thick, add 1 teaspoon coconut oil to loosen it.
  3. Prepare the cheese: Remove brie from the fridge 15 minutes before serving for best texture. Place it whole on the board. Slice goat cheese into rounds or leave it in a small log shape.
  4. Slice the fruit: Core the apple and slice it thinly. Toss slices with a squeeze of lemon juice to prevent browning if prepping ahead. Halve the grapes and dried figs.
  5. Arrange the board: Place the brie and goat cheese on opposite sides of the board. Add the honey nut mix in a small bowl or directly on the board. Arrange apple slices, grapes, and figs in small clusters around the cheese. Leave space for crackers.
  6. Add final touches: Drizzle extra honey over the brie and goat cheese. Sprinkle shaved dark chocolate over the nuts. Tuck fresh rosemary sprigs and mint leaves between ingredients for color and aroma.
  7. Serve immediately: Place crackers in a small stack or fan them out. Serve at room temperature for best flavor. The honey nuts can be made up to 2 days ahead and stored in an airtight container.

For best results, toast nuts yourself for deeper flavor. Serve cheese at room temperature. Honey nuts can be made 2 days ahead. To refresh sticky nuts, warm in a 300°F oven for 3 minutes. For a vegan version, use cashew cheese and maple syrup. For a nut-free version, use roasted pumpkin seeds and sunflower seeds.
