Lightened-Up Christmas Tree Pull-Apart Bread

A festive, healthier pull-apart bread shaped like a Christmas tree, made with Greek yogurt and a cinnamon-sugar coating. Perfect for holiday brunch or a cozy treat.

  • 2 ½ cups (315g) all-purpose flour
  • 1 cup (245g) plain Greek yogurt (full-fat or 2%)
  • 3 tablespoons (42g) melted butter (for dough)
  • 2 tablespoons (42g) honey
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • ⅓ cup (60g) coconut sugar
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons ground cinnamon
  • 3 tablespoons (42g) melted butter (for brushing)
  • Optional: powdered sugar for dusting, fresh rosemary sprigs, star-shaped cookie or fruit

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, mix Greek yogurt, 3 tablespoons melted butter, honey, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients. Stir until a shaggy dough forms, then gently knead 5-7 turns in the bowl. Do not overmix.
  5. Lightly flour a work surface. Roll dough into a 10×14-inch rectangle, about ¼-inch thick.
  6. Cut the rectangle into 24 triangles (cut into 4 long strips, then each strip into 6 triangles).
  7. In a small bowl, mix coconut sugar, granulated sugar, and cinnamon.
  8. Melt 3 tablespoons butter. Brush each dough triangle with butter, then coat in cinnamon sugar mixture.
  9. Arrange coated triangles on the prepared baking sheet in a tree shape: row of 5 at bottom, then 4, 3, 2, 1 at top. Place one triangle upside down at bottom for trunk.
  10. Bake for 18-22 minutes, until golden brown and puffed. Tent with foil if browning too quickly.
  11. Cool on baking sheet for 5 minutes, then transfer to a cooling rack. Dust with powdered sugar and garnish with rosemary and star if desired. Serve warm.

Notes

Don’t use nonfat Greek yogurt; it makes the dough dense. Use room temperature yogurt. Brush butter on triangles before coating for even coverage. Rotate pan halfway through baking if edges brown faster. Leftovers keep in an airtight container at room temperature for up to 2 days. Reheat in microwave or oven.
