A tender, cake-like banana bread made in a single bowl with simple ingredients. This recipe uses melted butter and ripe bananas to create an incredibly moist loaf that is easy to make and perfect for breakfast or snacking.

  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup granulated white sugar
  • 1/2 cup packed light or dark brown sugar
  • 2 large eggs, beaten
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup semi-sweet chocolate chips (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan generously with butter or non-stick spray, optionally lining the bottom with parchment paper.
  2. Peel and mash the ripe bananas in a medium mixing bowl until mostly smooth with a few small chunks.
  3. Melt the butter and let it cool slightly. Pour the warm melted butter into the bowl with the mashed bananas and whisk to combine.
  4. Add the granulated sugar, brown sugar, beaten eggs, and vanilla extract to the banana-butter mixture. Whisk vigorously for about a minute until glossy.
  5. Add the flour, baking soda, salt, and cinnamon (if using) to the wet ingredients. Switch to a spatula or wooden spoon and fold gently until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60 to 65 minutes. Do not open the oven door for the first 45 minutes. Test for doneness by inserting a toothpick into the center; it should come out clean or with moist crumbs.
  8. Remove from oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure bananas are very ripe (brown or black skins) for maximum sweetness and moisture. Do not overmix the batter once flour is added to avoid a tough texture. If the top browns too quickly, tent with aluminum foil for the last 15 minutes. For best texture, let the bread cool completely before slicing.
