  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon

  • 3 medium ripe bananas
  • 1 cup 100% pure pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5 inch loaf pan with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas until mostly smooth with a few small lumps.
  3. Add the pumpkin puree, vegetable oil, eggs, granulated sugar, and vanilla extract to the bananas. Whisk until well combined and uniform.
  4. Add the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg to the wet mixture. Stir gently until just incorporated; do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Do not open the oven door for the first 45 minutes.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely before slicing.

Notes

Ensure bananas are very ripe for maximum sweetness. Do not overmix the batter to avoid a dense texture. Pumpkin puree should be 100% pure, not pie filling. For a gluten-free version, substitute with a 1:1 gluten-free flour blend. The bread keeps well at room temperature for 2 days or in the fridge for 5 days.
