  • 1 cup packed brown sugar (dark or light)
  • 1/2 cup bourbon
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves (optional)
  • Freshly ground black pepper, to taste
  • 2025 whole cloves (optional, for studding the ham)
  • 1/2 cup water or apple juice

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry with paper towels. Score the surface in a diamond pattern about 1/4-inch deep. Press whole cloves into the intersections if using.
  3. In a mixing bowl, whisk together brown sugar, bourbon, Dijon mustard, apple cider vinegar, ground cinnamon, ground cloves, and black pepper until smooth and pourable.
  4. Place the ham on a roasting rack inside a roasting pan. Pour water or apple juice into the bottom of the pan.
  5. Brush the ham generously with about half of the glaze.
  6. Cover loosely with aluminum foil and roast for about 1 hour and 30 minutes (90 minutes) for an 8-10 pound ham. Baste every 20 minutes with the remaining glaze.
  7. Remove the foil during the last 20 minutes to allow the glaze to thicken and brown.
  8. Check the internal temperature with a meat thermometer; it should reach 140°F (60°C).
  9. Remove the ham from the oven and tent with foil. Let rest for 10-15 minutes before carving.

Notes

If the glaze starts burning during the last stage, tent the ham again and reduce oven temperature slightly. Whisk glaze fresh each time for smooth application. Resting the ham before carving ensures juicy slices. Use a meat thermometer to avoid overcooking.
