  • 1 cup boiling water
  • ½ cup cold water
  • ½ cup vodka

  • 1 cup boiling water

  • 1 (3 oz) box unflavored gelatin (like Knox)
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup boiling water
  • ½ cup cold water
  • ½ cup vodka

Instructions

  1. Prepare Your Station: Clear a large, flat space in your refrigerator. Arrange your 2 oz plastic shot cups on a baking sheet. This makes them easy to move in and out of the fridge without spilling. You should get about 20-24 shots from this recipe.
  2. Make the Orange Layer (Bottom): In a small bowl, combine the box of orange Jello with 1 cup of boiling water. Stir for 2 minutes, or until the powder is completely dissolved. Add ½ cup of cold water and ½ cup of vodka. Stir to combine. Pour the mixture evenly into the bottom of each shot cup. You want to fill them about ⅓ of the way full. Place the tray in the fridge for 30-40 minutes. The layer should be set and slightly firm to the touch, but not rock solid.
  3. Make the Yellow Layer (Middle): While the orange layer is chilling, repeat the process with the lemon Jello. In a clean bowl, combine the lemon Jello powder with 1 cup of boiling water. Stir until dissolved. Add ½ cup cold water and ½ cup vodka. Stir well. Let this mixture sit on the counter for about 10 minutes to cool slightly. Important: If you pour a hot liquid directly onto a semi-set layer, it will melt and bleed. Let it cool until it’s just warm to the touch.
  4. Assemble the Second Layer: After 30-40 minutes, remove the tray from the fridge. Carefully pour the cooled yellow Jello mixture on top of the orange layer. Use your turkey baster or a small spoon to pour it slowly over the back of a spoon to avoid disturbing the orange layer. Fill each cup to about ⅔ full. Return the tray to the fridge for another 30-40 minutes.
  5. Make the White Layer (Top): This layer is a little different. In a bowl, sprinkle the unflavored gelatin over ½ cup of cold water. Let it sit for 5 minutes to bloom. Then, pour in 1 cup of boiling water and stir until the gelatin is completely dissolved. Add the can of sweetened condensed milk and ½ cup of vodka. Whisk until everything is smooth and creamy. Return the tray to the fridge and let them set for at least 4 hours, but overnight is best. The longer they set, the cleaner the layers will be when you cut into them.
  7. Serve: Once fully set, pop the lids on the cups. They are ready to serve! They will look like perfect little candy corns. The texture is firm but jiggly, and the flavor is a sweet, creamy, boozy delight.

Notes

The key to clean layers is the ‘Almost Set’ rule: each layer only needs to set for 30-40 minutes until it has a thin, flexible skin on top, not fully firm. Always cool the next layer to room temperature before pouring to prevent melting. A turkey baster makes pouring easier. For best results, make the night before and let set overnight. Store in the fridge for up to 5 days.
