  • 1 small ciabatta bread loaf (68 inches long)
  • 4 ounces fresh mozzarella, sliced thin
  • 2 medium ripe tomatoes, sliced about 1/4 inch thick
  • About 10 fresh basil leaves, washed and patted dry
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic glaze
  • Pinch of flaky sea salt
  • Freshly ground black pepper to taste

Instructions

  1. Slice the ciabatta loaf horizontally into two even halves, about 6-8 inches long. Toast lightly for 2-3 minutes under a broiler or in a toaster oven if desired.
  2. Slice the fresh mozzarella into thin, uniform pieces about 1/4 inch thick. Slice the tomatoes similarly; halve cherry tomatoes if using.
  3. On the bottom half of the ciabatta, drizzle olive oil to keep the bread moist.
  4. Layer the mozzarella slices evenly across the bread, followed by the tomato slices.
  5. Arrange fresh basil leaves on top of the tomatoes.
  6. Sprinkle a pinch of flaky sea salt and freshly ground black pepper over the layered ingredients.
  7. Drizzle 1 tablespoon of balsamic glaze gently over the basil and tomatoes.
  8. Place the top half of the ciabatta over the fillings and press down gently but firmly.
  9. Wrap the sandwich tightly in parchment paper or beeswax wrap and pack in a picnic basket or cooler bag.
  10. Enjoy within 2 hours of assembly to prevent sogginess.

Notes

Let mozzarella sit at room temperature for 20 minutes before slicing for best texture. Toast bread lightly to prevent sogginess. Assemble sandwich no more than 2 hours before eating or pack ingredients separately and assemble just before serving. Use balsamic glaze for best flavor balance.
