  • 1 lb (450g) flank steak or sirloin, thinly sliced against the grain
  • 2 tsp soy sauce
  • 1 tsp cornstarch
  • 1 tbsp vegetable oil (canola or peanut oil)
  • 4 cups broccoli florets (fresh or frozen)
  • 1/4 cup water
  • 1/3 cup low-sodium soy sauce
  • 2 tbsp oyster sauce (or mushroom sauce for vegetarian)
  • 1 tbsp brown sugar or honey
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tsp toasted sesame oil
  • Optional garnishes: sesame seeds, sliced green onions

Instructions

  1. Thinly slice 1 lb flank steak against the grain into 1/4 inch thick strips.
  2. In a bowl, combine 2 tsp soy sauce and 1 tsp cornstarch with the beef slices. Toss well and let sit for 10 minutes.
  3. In a separate bowl, whisk together 1/3 cup soy sauce, 2 tbsp oyster sauce, 1 tbsp brown sugar or honey, minced garlic, and grated ginger. Set aside.
  4. Cut broccoli into bite-sized florets and rinse well.
  5. Heat 1 tbsp vegetable oil in a wok or skillet over medium-high heat. Add broccoli and 1/4 cup water. Stir-fry and cover for 2-3 minutes until broccoli is bright green and tender-crisp. Remove and set aside.
  6. Add more oil if needed and increase heat to high. Add beef in a single layer, cooking in batches if necessary. Stir-fry for 2-3 minutes until browned but not overcooked.
  7. Return broccoli to the pan with beef. Pour sauce over and toss quickly to coat. Cook 1-2 minutes until sauce thickens and everything is heated through.
  8. Drizzle 1 tsp toasted sesame oil over the stir fry, toss gently, and remove from heat.
  9. Serve hot, garnished with sesame seeds and sliced green onions if desired.

Notes

Marinate beef briefly but effectively to tenderize. Use high heat and avoid overcrowding the pan to get a good sear. Cook broccoli until just tender-crisp to maintain texture and color. Add sesame oil at the end for aroma. For gluten-free, use tamari and gluten-free oyster sauce or mushroom sauce. Frozen broccoli can be used if thawed and drained well.
