  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 3 cups broccoli florets (about 250 g), washed and trimmed
  • 1 tablespoon vegetable or canola oil
  • 1/4 cup (60 ml) beef broth or water
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 tablespoons cold water
  • Optional: red pepper flakes or a dash of chili paste

Instructions

  1. Slice 8 oz (225 g) flank steak or sirloin thinly against the grain into 1/4-inch (0.6 cm) strips. Partially freeze for 15 minutes to make slicing easier.
  2. In a medium bowl, combine 2 tbsp soy sauce, 1 tbsp oyster sauce (optional), 1 tsp cornstarch, 1 tsp sesame oil, 1 tsp minced ginger, and 2 minced garlic cloves. Toss beef strips in marinade and let sit for at least 10 minutes.
  3. Wash and trim 3 cups (250 g) broccoli florets into bite-sized pieces. Optionally peel and slice stalks thinly.
  4. In a small bowl, whisk together 3 tbsp soy sauce, 2 tbsp brown sugar or honey, 1 tbsp rice vinegar, and optional red pepper flakes. In a separate dish, mix 1 tsp cornstarch with 2 tbsp cold water until smooth. Set both aside.
  5. Heat 1 tbsp vegetable oil in a wok or skillet over medium-high heat. When oil shimmers, add marinated beef in a single layer. Sear for 2 minutes without stirring, then stir-fry for 1-2 minutes until browned. Remove beef and set aside.
  6. Add more oil if needed, then stir-fry broccoli for 2 minutes. Pour in 1/4 cup (60 ml) beef broth or water, cover, and steam for 2-3 minutes until broccoli is tender but crisp. Remove lid and stir.
  7. Return beef to pan with broccoli. Pour in sauce mixture and stir well. Add cornstarch slurry and cook for 1-2 minutes, stirring constantly until sauce thickens and coats ingredients.
  8. Serve immediately over steamed rice or noodles. Adjust seasoning if needed.

Notes

Do not overcrowd the pan to avoid steaming instead of stir-frying. Add cornstarch slurry last to prevent clumping. Partially freezing beef makes slicing easier. For gluten-free, use tamari instead of soy sauce and ensure oyster sauce is gluten-free or omit it.
