  • 3 cups fresh spinach, loosely packed
  • 1 cup heavy cream (240 ml)
  • ½ cup grated Parmesan cheese (about 50 g)
  • 8 ounces fettuccine or linguine pasta
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces of pasta and cook according to package instructions until al dente (about 10-12 minutes). Drain and set aside, reserving ½ cup of pasta water.
  2. While pasta cooks, pat dry shrimp with paper towels. Season lightly with salt, pepper, and ½ teaspoon Italian seasoning.
  3. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat. Add shrimp in a single layer and cook 2 minutes per side until pink and just cooked through. Remove shrimp and set aside.
  4. Lower heat to medium. Add remaining 2 tablespoons butter to skillet. Once melted, add minced garlic and sauté for about 30 seconds until fragrant.
  5. Stir in chopped sun-dried tomatoes and ½ teaspoon Italian seasoning. Cook for 1-2 minutes to meld flavors.
  6. Pour in heavy cream and bring to a gentle simmer. Add fresh spinach and cook until wilted, about 2 minutes, stirring occasionally.
  7. Stir in grated Parmesan cheese until melted and sauce thickens slightly (about 2-3 minutes). If sauce is too thick, add reserved pasta water a tablespoon at a time to loosen.
  8. Return shrimp to skillet along with drained pasta. Toss gently to coat everything in sauce. Adjust seasoning with salt, pepper, and optional red pepper flakes.
  9. Remove from heat and let rest for 1 minute. Serve immediately with extra Parmesan if desired.

Notes

Do not overcrowd the pan when cooking shrimp; cook in batches if needed. Use fresh garlic minced just before cooking to avoid bitterness. Keep heat medium or medium-low when adding cream and cheese to prevent sauce from breaking. Reserve pasta water to loosen sauce if needed. Add spinach last to keep it bright and tender. Reheat leftovers gently with a splash of cream or pasta water to maintain sauce texture.
