A fast and flavorful recipe for juicy steak bites seared to perfection and topped with a rich garlic herb butter, perfect for busy nights or last-minute gatherings.

  • 1 pound sirloin, ribeye, or flank steak, trimmed and cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon extra virgin olive oil
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon freshly squeezed lemon juice
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pat the steak cubes dry with paper towels. Place them in a mixing bowl and drizzle with olive oil. Season generously with salt and freshly ground black pepper. Toss to coat evenly.
  2. In a small bowl, combine the softened butter, minced garlic, chopped parsley and thyme, lemon juice, and red pepper flakes if using. Mix well and set aside at room temperature.
  3. Heat a cast iron or heavy skillet over medium-high heat until very hot, almost smoking.
  4. Add the steak cubes in a single layer without crowding the pan. Cook for 2-3 minutes on one side without moving to develop a crust. Flip and cook another 2 minutes until browned but still juicy inside. Cook in batches if necessary.
  5. Lower the heat to medium and spoon the garlic herb butter over the steak bites. Cook for another 1-2 minutes, spooning the butter over the meat to coat each piece.
  6. Remove from heat and transfer the steak bites to a serving plate. Spoon any extra garlic herb butter from the pan over the top and serve immediately.

Notes

Patting the steak dry is crucial for a good sear. Avoid overcrowding the pan to prevent steaming. Use a smoking hot pan for the best crust. Add garlic herb butter at the end to keep garlic fresh and prevent burning. Let steak cubes come to room temperature before cooking for even doneness.
