These quick and easy turkey and cheddar pinwheel roll-ups are perfect for lunchboxes, picnics, or a simple snack. Made with just a few ingredients, they come together in 10 minutes and are a fun twist on the classic sandwich.

  • 4 large flour tortillas (8-inch or 10-inch)
  • 810 slices deli turkey (oven-roasted or smoked)
  • 46 slices cheddar cheese (sharp cheddar preferred)
  • 23 tablespoons cream cheese, softened
  • Salt and pepper to taste (optional)

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 10-15 minutes, or microwave for 5-10 seconds.
  2. Lay one tortilla flat on a cutting board. Ensure it is at room temperature to prevent cracking.
  3. Spread an even, thin layer of cream cheese over the entire tortilla, leaving a half-inch border around the edges.
  4. Place 4-5 slices of turkey flat over the cream cheese, overlapping slightly to cover evenly.
  5. Add 2-3 slices of cheddar cheese on top of the turkey, tearing slices if needed to fit.
  6. Optionally, sprinkle a pinch of salt and pepper over the cheese.
  7. Starting from one edge, tightly roll the tortilla into a log, keeping the filling snug.
  8. Wrap the rolled tortilla tightly in plastic wrap and refrigerate for 5-10 minutes to set.
  9. Unwrap the log and slice into 1-inch thick rounds using a sharp serrated knife with a gentle sawing motion.
  10. Serve immediately or pack into lunchboxes. For best results, slice just before serving.

Notes

For best results, let the rolled tortilla rest in the fridge for 5-10 minutes before slicing. Pat turkey slices dry to prevent sogginess. Use room temperature tortillas to avoid cracking. These pinwheels can be made up to 24 hours in advance; slice just before serving.
