The Best Buffalo Chicken Dip with Crispy Tortilla Chips

This creamy, spicy, tangy buffalo chicken dip is the ultimate game day appetizer. With a double-cheese technique and perfectly seasoned chicken, it’s a crowd-pleaser that comes together in under 30 minutes.

  • 2 cups cooked chicken, shredded
  • 8 ounces cream cheese, softened to room temperature
  • 1/2 cup buffalo wing sauce (preferably Frank’s RedHot Original)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1/4 cup green onions, sliced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 large bag crispy tortilla chips (for serving)
  • Optional: celery sticks and carrot sticks (for serving)
  • Optional: extra buffalo sauce (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C). Ensure cream cheese is at room temperature.
  2. Shred the cooked chicken using two forks until fine and evenly textured.
  3. In a mixing bowl, combine softened cream cheese, buffalo wing sauce, ranch dressing, garlic powder, and black pepper. Beat with a hand mixer on medium speed until smooth (1-2 minutes). Scrape down the sides.
  4. Fold in the shredded chicken, half of the cheddar cheese, half of the Monterey Jack cheese, and half of the green onions. Stir until evenly distributed. If too stiff, add a tablespoon of milk.
  5. Transfer the mixture to a 9×13 inch baking dish or cast iron skillet. Spread into an even layer.
  6. Top with the remaining cheddar cheese and Monterey Jack cheese, sprinkling evenly.
  7. Bake for 20-25 minutes, until hot, bubbly, and the cheese is melted and golden brown in spots.
  8. Remove from oven and let rest for 5 minutes to set.
  9. Sprinkle remaining green onions on top. Serve immediately with crispy tortilla chips, celery sticks, and carrot sticks.

Notes

For best results, use room temperature cream cheese to avoid lumps. Shred cheese from blocks for smooth melting. Rotisserie chicken works great. If making ahead, prepare without topping cheese, refrigerate, then add cheese and bake, adding 5-10 minutes. To keep warm at a party, transfer to a slow cooker on warm setting.
