Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on the long sides.
  2. Wash zucchini, trim ends, and shred using a box grater to get 2 cups. Place shredded zucchini in a clean kitchen towel or cheesecloth and gently squeeze out some moisture—it should be damp, not dry. Set aside.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon until evenly distributed.
  4. In a medium bowl, whisk eggs until frothy. Add granulated sugar, brown sugar, vegetable oil, and vanilla extract. Whisk until smooth and glossy.
  5. Pour wet ingredients into dry ingredients. Stir gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  6. Fold in shredded zucchini and chocolate chips until evenly distributed. Batter will be thick and slightly lumpy.
