  • 3 cups (about 150g) mini marshmallows
  • 1 1/2 cups roughly crushed graham crackers
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or grease it well.
  2. In a large mixing bowl, combine melted butter, granulated sugar, and brown sugar. Whisk until smooth and glossy, about 1-2 minutes.
  3. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract until batter is shiny and slightly thick.
  4. In a separate bowl, sift together flour, cocoa powder, espresso powder, baking powder, and salt.
  5. Gradually fold dry ingredients into wet ingredients until just combined, avoiding overmixing.
  6. Fold in chocolate chips and crushed graham crackers, leaving some larger pieces for texture.
  7. Pour batter evenly into the prepared pan and smooth the top with a spatula.
  8. Bake for 25-30 minutes, or until a toothpick inserted near the center comes out with moist crumbs but not raw batter.
  9. Remove brownies from oven and immediately sprinkle mini marshmallows evenly over the top.
  10. Switch oven to broil on low or the lowest setting. Broil marshmallows for 1-3 minutes, watching closely until melted, bubbled, and golden brown.
