  • 1 teaspoon vanilla extract
  • Pinch of salt (about 1/8 teaspoon)

Instructions

  1. Combine the dry ingredients. In a large mixing bowl, add 1 cup (90g) rolled oats, 2 tablespoons (14g) ground flaxseed (if using), and a pinch of salt. Stir together until evenly distributed.
  2. Add the wet ingredients. Pour in 1/2 cup (130g) creamy peanut butter, 1/3 cup (110g) honey, and 1 teaspoon vanilla extract. Stir everything together, pressing down firmly with a spatula to incorporate the peanut butter into the oats. The mixture will look dry and crumbly at first but will come together.
  3. Check the consistency. Squeeze a small amount in your hand—if it holds its shape without falling apart, it’s ready. If too dry, add a teaspoon of honey or a splash of milk. If too sticky, add a tablespoon more oats.
  4. Fold in the chocolate chips. Gently fold in 1/3 cup (60g) mini chocolate chips until evenly distributed. Avoid overmixing to prevent the chips from breaking.
  5. Chill the mixture (optional but helpful). If your kitchen is warm, refrigerate the bowl for 10-15 minutes to firm up the mixture for easier rolling.
